The five course set menu features a dizzying array of carefully selected dishes including Tasmanian salmon ballotine with celeriac remoulade and crispy capers or tartare of salmon with horseradish and sour cream, potato beetroot salad followed by Peking duck consomme or duck and hoisin dumpling with shaved green lip abalone. The first meat course includes either a seared rack of Australian lamb with basil jus or slow cooked bell peppers and tomatoes, braised shoulder, parsnip puree and dauphinoise potatoes.
After the lamb a medium roasted fillet of Australian beef or smoked garlic and phyllo pastry roulade, white onion cream, shitake and vegetable broth will be served. Diners have the choice of lemongrass poached pineapple or vanilla and white chocolate cheese cake with passionfruit sorbet. Rounding off the meal there will be freshly brewed Lavazza coffee or selected Ronnefeldt Teas with assorted sweets. Each of the 10 winning wines will be revealed and matched with the 5 course menu which comes at an all inclusive price of VND3,300,300.
