Culinary legend Auguste Escoffier — chef to emperors, kitchen runner of the Ritz Carlton, inventor of Melba toast — is being celebrated at the Caravelle Hotel from Jun. 21 to Jun. 27, with a showcase of the fin-de-siècle master’s recipes from Le Guide Culinary. Known for giving the world the ‘a la carte’ menu, as well as classic French dishes such as Tournedos Rossini, Omelette Arnold Bennett and Cherries Jubilee, Escoffier catered to European royalty and established kitchens in some of the world’s grandest hotels over the course of a 62-year career. June is Macaroon Month at the Park Hyatt, with Head Chef of Pastry Bertrand Sommereux leading the way. These bite-sized slices of perfection will accompany every tea and coffee order, in blueberry, vanilla, strawberry, chocolate, coffee, matcha and salted caramel varieties. Originally from France, this sweet meringue-based confection is well-loved by gourmets around the world. A chef’s selection of assorted macaroons is also available for VND170,000++.
